Sustainable Food & Equipment Sourcing
Our food is prepared daily from fresh raw ingredients with the emphasis on healthy and local produce. We believe that Scotland’s coastline and countryside are bursting with some of the finest raw materials in the world and we are committed to using the resources which we can find so easily on our doorstep, thus supporting the British farming industries. We encourage our chefs to appreciate and use these materials and the emphasis whilst cooking is on simplicity of flavours so that our customers can truly taste and enjoy the fine quality of these raw materials.
We reflect the changing seasons within our menu’s and take full advantage of seasonal produce and seasonal offers from our local farmers and producers ensuring that our menu’s are constantly evolving in line with seasonal changes and events.
We are committed to protecting current fish stocks and to the long term survival of the fishing industry. We support the action which has already been taken by the MSC (Marine Stewardship Council) with regards to one of the world’s most important renewable sources and we have incorporated sustainable fish products from MSC accredited suppliers into our meal plans.
We recognise the importance of the work of the FSC (Forest Stewardship Council) and we are committed to sourcing our equipment and our building materials where possible from renewable sources for site refurbishment purposes.
Ethical Sourcing
We are committed to actively supporting the Fairtrade foundation and Fairtrade Products. As more and more consumers are becoming aware of Fairtrade and sales of Fairtrade products are increasing year on year we are able to give hundreds of thousands of producers in developing countries the chance to build a better future and to compete in the global marketplace. By adopting fair-trade products our company can help producers to improve their livelihoods, strengthen their businesses and benefit their communities. The Fairtrade mark also guarantees a greater respect for the environment as environmental protection and sustainability must be included in the producer organisation’s management policies, thus ensuring that they comply with national and international legislation on protection of the environment.
For these reasons and to demonstrate our company’s commitment we currently stock only Organic Fairtrade Coffee, Tea, Sugar and Hot Chocolate in our cafe’s and canteens. To accompany the above beverages we also stock Fairtrade cookies, chocolate, cereal bars and soft beverages and we support the “Fairtrade at Work Campaign”
